Kate's Irish Soda Bread

I actually gave up making my Nana McIntyre's recipe when a dear friend shared this one. But, I'd like to think that she would agree that it beats hers! The glaze is the clincher.

Ingredients:

  • 3 cups flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 stick butter (softened)
  • 1 egg (beaten)
  • 1 cup raisins
  • 1-1/4 cups buttermilk

Mix flour, sugar, baking powder and baking soda together. Set aside.

Mix softened butter, egg, raisins and buttermilk together.

Mix in the dry ingredients.

Divide the dough in half. Put each half in a greased 8-inch aluminum pie plate.

Bake 50 minutes in a preheated 350 degree oven.

Glaze:

  • 2 tablespoons melted butter
  • 1 cup confectioner’s sugar
  • 2 tablespoons milk

Mix well and drizzle over slightly warm bread.
