Mom's Pumpkin Muffins
It just wasn't Fall until Mom made these muffins. Spicy and delicious; definitely best warm with butter and a cup of hot cider. The golden raisins are worth it.
1 1/2 Cups flour
2 tsp baking powder
3/4 tsp salt
1 Cup sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 Cup butter
1 egg
1/2 Cup canned pumpkin
1/2 Cup milk
1/2 Cup raisins (Mom always used golden raisins in these)
1 Tblspn sugar
Sift first 6 ingredients together. Cut in butter and add raisins. Combine beaten egg with pumpkin and milk. Add to dry mixture, mix to combine. Fill greased pan (or use paper cups) 2/3 full. Bake at 400 for 20 minutes. Enjoy!
